Roasted Coffee...

I can't think of a better way to end 2014 than to roast the two most popular subscription coffees this year. 2014 has come and is almost gone but brought us a fairly good harvest year. We laughed, we cried, and we definitely drank lots of coffee. 2015 is looking like another promising year and will blast off with some good lots! But until then, let's celebrate the tail end of this year with these two coffees! 

Because we will be closed December 24th, 25th and 26th and December 31st, January 1st and 2nd, this coffee is available for the Ongoing subscription - Sweet Maria's Bi-Weekly Roasted Coffee Pairing subscribers only.  


Ethiopia Illubabor Baaroo City+

The aroma right after brewing gives off the sweet smell of coconut, floral notes and caramel. As it cools, there is a rich cocoa sweetness, juicy body with a clean tangerine-like acidity in the finish. Creaminess also lingers in the finish while leaving flavors of warm milk chocolate.

Ethiopia Kaffa-Michiti Cooperative City+

This aroma has lots of fresh cinnamon stick and orange peel right up front. The flavor also brings cinnamon, and baking spices. As it cools there is a sweet vanilla and fresh ginger bite. I can also pick up a bit of a raspberry tartness in the finish as well as a full rounded body.

Product Guide: Coffee Storage

Green Coffee Storage                                                        Green coffee is tough. it's dense, hard and good at standing up to time and the elements, but nothing lasts forever. You can expect green coffee to remain fresh for about 6 months (some say up to a year). We ship green coffee to you in plastic bags with holes punched in them. The plastic provides a great protective barrier and the holes allow the coffee to breathe a little. We recommend storing your coffee in these bags if you plan on roasting within a few weeks after receiving your coffee. If you keep a lot of green coffee in storage, you will want to store it in cloth bags. Cloth allows for more air to pass around the beans.


Product Guide: Travel Mugs and Travel Bottles

If you have a busy lifestyle or travel a lot, you understand the importance of a well-built travel mug. Spilled coffee is the last thing you want to worry about when on the go. There's a lot of cheap-o coffee vessels out there with leaky lids, thin walls and plastic interiors that aren't suitable for hot beverages. All the travel mugs we carry, are durable, easy to clean and have a variety of capacities. They may be a little more expensive in comparison to what you will find in the kitchen section at your local department store but we promise that they will last for a long time and keep your coffee hot for a long time.

We also stay away from offering mugs with complicated springs, levers and tight crevices. Mechanized flip tops and fancy lids are cool but after a few months, tend to develop goop and residue that is very hard to clean, even in a dishwasher.

It's made to take a beating, keeps your coffee hot and comfortable to drink from. The extended handle and carabiner may seem cumbersome but after using it for the first time, you will find that they don't get in the way at all and are actually quite nice....

Kenya Nyeri Gachatha AA has tons of layered fruits. Pineapple, citrus, apple, grape and mango. Also a very juicy body and beautiful acidity! It's available in 1 and 2 pound bags only!

Ethiopia Agaro - Duromina Cooperative has nice florals, stone fruits and caramelized sugars. This Ethiopia also is great to use as a single origin espresso.

Colombia Inza - Finca Bellavista tastes of sweet honey, plum, raw cane sugar. This is one clean, sweet and bodied Colombia!

Colombia Pitalito Santa Rita SWP Decaf has flavors of unrefined sugar, baking spices and a nice tight acidity.

Ethiopia Kaffa-Yirga Cheffe SWP Decaf displays tropical and stone fruits, complex florals and refreshing acidity. This is a fantastic coffee, and not just for a decaf!

Guatemala Huehuetenango Xinabajul SWP Decaf is a sweet one. Caramel, butterscotch, apple, chocolate and vibrant acitity.

Huila y Huehue SWP Decaf Blend. It's a blend of Colombia and Guatemala, as you can probably identify from the name. It has bold raw sugars, cinnamon and all-spice. It's well balanced with a clean finish. Use it as an espresso too!

Roasted Coffee: Guatemala Proyecto Xinabajul - Pena Roja & Java Malabar - Gunung Haruman

I really value my time roasting on our Probat L-12. It's design makes it easy to control and it responds quickly and accurately. I usually start roasting around 6:00 am and finish about 6-7 hours later, every other Wednesday. I roasted 11 batches each of Guatemala and Java, and I'm very excited to share them with you!


Guatemala Proyecto Xinabajul - Pena Roja City+

I always enjoy roasting coffees from Guatemala. They can take aggressive heat, they have an excellent defining first crack from start to finish, and they overall tend to react nicely in the roaster. This Guatemala was no exception. I roasted the Pena Roja at City+ with a few roasts that were just a tad lighter, and blended it all together. I wanted to preserve the beautiful acidity in this cup while also developing the cocoa. Mission accomplished! This cup has nice crispy acidity of fresh fruits, and an obvious cocoa finish. Expect a very clean and juicy cup! 


Java Malabar - Gunung Haruman City+

Here is the proof that the quality of Java coffees have improved. This Java in particular has taken a leap toward sweetness and clarity which is great to see in an Indonesia coffee. It has a clearly defined acidity and fruitiness that shows at it's best once cooled. There is also a sweet sugary aftertaste that completes the finish. I'm very impressed with this Java!
